France is the leading goat's cheese producer in the world, producing more than 85,000 tonnes on farms and dairies in 2003.

Although goats are bred across France, those used for milk production are mainly located to the South of the Loire.

The variety of soils and their natural characteristics affect the personality, variety and wealth of tastes that France’s large family of goat's cheeses is known for.

France has developed a tradition of quality cheese-making, spanning from cheeses made by traditional methods to state-of-the-art dairy production techniques.

- Specialities

• Log-shaped goat's cheese, these are impossible to miss in the region.
• Chabichou du Poitou a PDO cheese, in the shape of a small, keg-shaped cylinder, is known in France as a 'bonde’.
• 'Camembert-shaped' goat's cheese (this is not really a Camembert, although it looks like one).
• Mothais sur feuille, originating from Poitou, this goat’s cheese is packaged in a chestnut or a plain leaf.
