Appearance: A flat disk (diameter 10 - 12cm, height 2.5cm) with a natural rind loosely wrapped in a leaf.
Type of cheese: It is a smooth, creamy, soft cheese.
Taste and flavours: It has a predominantly lactic taste with tannins more evident with maturity.
Production: It is made from full fat raw milk using the lactic curd method.
Maturation period: 21 days.

This country cheese which is a contemporary of the 'Chabi' cheeses, has been sold in local markets since the mid 1800s.

Delicious at different stages of ripeness, this cheese can be enjoyed all year round and goes particularly well when dry, sliced and served with a glass of Pineau des Charentes.
