Fruity or dry white wine; a white Reuilly or a Sauvignon from Touraine or Berry.
Appearance: Pyramid-shaped (height 12.5cm, length of each side 6.5cm at the base and 2.5cm at the top) with a fine, natural, bluish rind.
Type of cheese: It has a firm yet soft texture.
Taste and flavours: This cheese has a wide range of tastes from very mild to very strong with nutty as well as earthy undertones.
Production: It is made from full fat, raw milk. A small amount of rennet is added and then it is coagulated and ladled into specific moulds. These cheeses are drained, removed from their moulds, salted and then dried on racks or straw cases.
Maturation period: 14 days.
Description / History / Origin
The production area of this cheese is restricted to the western area of Berry which has a mild, oceanic climate. It has been in the heart of the Brenne region’s natural park since 1990.

There are many ways to enjoy this cheese.When fresh, it is often chopped and mixed through a salad or eaten on toast accompanied by a good white wine.A smaller version of Pouligny Saint Pierre is also available and weighs 150g.
