- Appearance: A flat, circular cylinder (diameter 9 - 12cm, height 3 - 4.5cm), with sharply angled edges, a pinkish or orangey-coloured washed rind that has some superficial mould.
- Type of cheese: It is an uncooked, pressed cheese that is white with a smooth, soft, homogeneous texture.
- Taste and flavours: It has a subtle taste that becomes more distinctive with age.
- Production: It is hand-made exclusively on farms from raw milk with rennet added. It is then coagulated, moulded, salted, dried, washed and matured.
- Maturation period: 21 days.
Description / History / Origin
This cheese has traditionally been made for over 300 years in the foot hills of the French Alps in Savoie, Aravis, Bauges and Chablais. Chevrotin benefits from this natural terrain which is perfect for farming Alpine chamois goats.
More information
Each cheese bears the famous case-in mark, exclusive to PDO’s, which guarantee their authenticity. Chevrotin should be kept in its original wrapping. It should be taken out of the fridge and left at room temperature for two hours before eating.
