A Gamay, red or white Cabernet, a Chardonnay or a Sauvignon blanc from Haut-Poitou.
Appearance: Circular, shaped like a Camembert cheese (diameter 9 - 11cm, height 2 - 3cm) with sharply angled sides and a rind that is ivory-coloured and sometimes has an orangey-brown marbling and is slightly wrinkled.
Type of cheese: It has a soft, melt-in-the-mouth, smooth texture.
Taste and flavours: It has a mild taste and becomes stronger with age.
Production:It can be made from raw or pasteurised milk. Rapid coagulation is brought on by a large dose of rennet.
Maturation period: 7 days.

Circular, Camembert-shaped goat’s cheeses have been around since 1907.It earned its name from the traditional box packaging it was sold in.This is a classic cheese from Poitou-Charentes.

This cheese is a fine addition to a cheese board and also adds flavour to vegetable gratins, croutons with tapenade and cucumber sandwiches.You can also buy a slice of it from large 1kg 'Camembert' behind deli counters.
