In another pan, whisk the egg yolks with the sugar for approx. 5 minutes, until pale and doubled in volume.
Pour the boiling milk over the egg mixture and stir well with a wooden spoon (not a whisk). The mixture should not foam.
Heat this mixture gently, without bringing to the boil, until it coats the spoon. It should also be glossy in appearance.
Once ready, pour the mixture into a glass bowl, stirring to prevent it from cooking further. If any lumps appear, add 2 or 3 ice cubes to the mixture and whip vigorously to bring the temperature down. The mixture must be thoroughly cooled in the fridge
