  • the goat's milk into a pan, add the vanilla pods and bring to the boil.
  • In another pan, whisk the egg yolks with the sugar for approx. 5 minutes, until pale and doubled in volume.
  • Pour the boiling milk over the egg mixture and stir well with a wooden spoon (not a whisk). The mixture should not foam.
  • Heat this mixture gently, without bringing to the boil, until it coats the spoon. It should also be glossy in appearance.
  • Once ready, pour the mixture into a glass bowl, stirring to prevent it from cooking further. If any lumps appear, add 2 or 3 ice cubes to the mixture and whip vigorously to bring the temperature down. The mixture must be thoroughly cooled in the fridge
  • Churn in an ice-cream maker.
  • Sprinkle with chopped mixed nuts to serve.
