Chocolate, vodka and goats cheese mousses

  • Break up the chocolate into a heatproof bowl and add 100ml cold water and the sugar. Melt either in the microwave on medium power for 2-3 minutes stirring until smooth, or place the bowl over a pan of gently simmering water and stir until smooth.
  • Remove from the heat and allow to cool, stirring occasionally until tepid.
  • Beat in the cheese, lemon zest and vodka to taste.
  • 4. Place 2-3 raspberries or chopped pears into the base of 6 shot glasses or small wine glasses. Spoon the mousse on top and chill lightly for about 30 minutes before serving.

1 x 150g tub French soft fresh goats cheese
grated zest ½ lemon
1-2 tablespoons vodka
fresh raspberries or chopped canned pears, to serve
