Mix the strawberries with the kiwi fruit and sprinkle with 25g sugar. Leave aside for 15 minutes.
Gently soften the goat’s cheese with a fork. Add the crème fraîche and water, and stir until smooth. Set aside.
Whisk the whipping cream and add the remaining sugar and a drop of vanilla essence.
Fold the crème fraîche and goat’s cheese mixture into the whipping cream.
Spoon into dessert dishes by layering the fruit first, then the creamed mixture and so on.
Garnish with mint leaves to serve.
