Strawberry and kiwi fresh goat's cheese cream

  • Mix the strawberries with the kiwi fruit and sprinkle with 25g sugar. Leave aside for 15 minutes.
  • Gently soften the goat’s cheese with a fork. Add the crème fraîche and water, and stir until smooth. Set aside.
  • Whisk the whipping cream and add the remaining sugar and a drop of vanilla essence.
  • Fold the crème fraîche and goat’s cheese mixture into the whipping cream.
  • Spoon into dessert dishes by layering the fruit first, then the creamed mixture and so on.
  • Garnish with mint leaves to serve.

150g crème fraîche
50ml water
125ml whipping cream
