There is really nothing better than goat's cheese pepped up with a few drops of balsamic vinegar or a few sprigs of fresh mint, or simply served with compotes or jam.

Full of flavour and good for you, goat's cheeses are one way to break the monotony of your usual breakfast and get the day off to a good start.
- Scrambled eggs with fresh goat's cheese
Mix up a fresh goat's cheese with four eggs and season. Melt a teaspoon of butter in a pan and add the cheese mixture. Cook until the eggs are just starting to solidify, then add a few herbs and a drop of balsamic vinegar and cook for a few seconds more. Add a dessert spoon of cream, stir well and serve piping hot.
