Spreadable goats cheese and watercress soup hot or chilled

Starters Quiet easy 4 30 min
  • Warm the oil in a large pan add the onions and sauté for 10 minutes on a gentle heat, do not brown.
  • Add the cooked potatoes, watercress and stock, mix well, bring to the boil, cover with a lid and gently simmer for 4 minutes.
  • Blitz with a hand held blender until smooth check the seasoning and adjust, serve with a spoonful of spread able goat’s cheese ontop and garnish with a little watercress.
