Storing

To keep goat's cheese in the best condition, both taste and nutrition-wise, the ideal place to store it is in the vegetable compartment of your fridge.
It is best to keep it separate from other foods.

Remember: with matured goat's cheeses, for the best flavour it is advisable to take them out of the fridge and leave at room temperature for an hour before eating. Fresh goat's cheeses can be eaten straight from the fridge.

Cutting

img_deguste_pla2Knowing how to cut a cheese properly is more important than you would think! A well-cut cheese looks better and keeps for longer.

Make firm, definite slices to avoid squashing the cheese too much. Remember the golden rule: to taste a cheese properly, you must be able to discover all of its different elements.

"The art of cutting cheese"

« I never tire of repeating that the art of cutting and sharing cheese around must be a ritualistic act and not a bloody sacrifice. The cheese is not our chosen victim - do not let it suffer too much. Simply savour it!»

so wrote the Italian gourmet Marco Parenti in his little 'half-serious' book called 'The art of cutting cheese'  (translated into French by Editions Le Sureau – 2000).
