Storing
To keep goat's cheese in the best condition, both taste and nutrition-wise, the ideal place to store it is in the vegetable compartment of your fridge. It is best to keep it separate from other foods.
Remember: with matured goat's cheeses, for the best flavour it is advisable to take them out of the fridge and leave at room temperature for an hour before eating. Fresh goat's cheeses can be eaten straight from the fridge.
Cutting
Knowing how to cut a cheese properly is more important than you would think! A well-cut cheese looks better and keeps for longer.
Make firm, definite slices to avoid squashing the cheese too much. Remember the golden rule: to taste a cheese properly, you must be able to discover all of its different elements.
